A healthy, simple, flavorful meal that is ready in just 30 minutes!
Happy Wednesday to you! While I’m currently drowning in a massive to-do list that never seems to end before friends arrive, let me show you a healthy and flavorful dinner recipe that I prepared for date night the other week. It’s the kind of carefree dinner that you’ll want to keep around. It took just 30 minutes and leftovers hit the spot for lunch the next day.
Between our hectic jobs our weeks get pretty busy so we try to make date nights happen as often as we can. With Valentine’s Day around the corner, it’s the perfect opportunity to have one. We’re that couple that prefers staying in to avoid the crowds and over-priced meals.
Enter the best dish, ever.
My favorite part of this dish is that it’s highly customizable. I tend to use veggies that I have on hand— that’s how this dish actually started! This time I used zucchini, tomatoes, broccoli, mushrooms and onion.
When making any pasta dish, I always grab for the same brand. Barilla has always and will always be my #1 favorite— just take a look at my pantry! While this dish works with any type of pasta (penne, elbows, rotini or spaghetti), I typically use penne so everything is about the same size. Now that they have ProteinPlus™ I stock up. 17g of protein from all natural ingredients.
Let’s breakdown how easy this dish actually is:
(1) Prepare & roast veggies
(2) Make pasta while the veggies are roasting
(3) Mix pasta & veggies together with a little sauce
Your next date night will be delish!
