Happy Wednesday to you! While I’m currently drowning in a massive to-do list that never seems to end before friends arrive, let me show you a healthy and flavorful dinner recipe that I prepared for date night the other week. It’s the kind of carefree dinner that you’ll want to keep around. It took just 30 minutes and leftovers hit the spot for lunch the next day.

Between our hectic jobs our weeks get pretty busy so we try to make date nights happen as often as we can. With Valentine’s Day around the corner, it’s the perfect opportunity to have one. We’re that couple that prefers staying in to avoid the crowds and over-priced meals.

My favorite part of this dish is that it’s highly customizable. I tend to use veggies that I have on hand— that’s how this dish actually started! This time I used zucchini, tomatoes, broccoli,  mushrooms and onion.

When making any pasta dish, I always grab for the same brand. Barilla has always and will always be my #1 favorite— just take a look at my pantry! While this dish works with any type of pasta (penne, elbows, rotini or spaghetti), I typically use penne so everything is about the same size. (3) Mix pasta & veggies together with a little sauce

Roasted Vegetable Pasta

  • Total Time: 30m

Ingredients

  • 2 1/2 cups broccoli florets
  • 2 cups sliced mushrooms
  • 1 onion, largely diced
  • 1 zucchini chopped (~about 3 cups)
  • 3 tablespoons olive oil
  • 2 teaspoons salt
  • 2 teaspoons freshly ground black pepper
  • 1 teaspoon red pepper flakes
  • 3 cloves garlic, minced
  • 1 box Barilla ProteinPlus® Penne, cooked and drained
  • 1/3 cup Barilla® marinara sauce (I used spicy marinara)
  • 1/4 cup basil, roughly chopped
  • 1/4 cup freshly grated parmesan cheese

Instructions

  1. Preheat the oven to 450F degrees. Line a baking sheet with a silicone baking sheet or foil. Set aside.
  2. Chop your desired veggies into bite size pieces. I used zucchini, broccoli, mushrooms and onion. Line them on a baking sheet as pictured above. Drizzle with the olive oil. Sprinkle with salt, pepper, parsley, red pepper flakes, and fresh garlic. Roast for 20 minutes, stirring half way through.
  3. Pour cooked pasta into a large bowl. Add veggies, marinara sauce, basil, parmesan cheese and stir together. Serve immediately. Garnish with additional parmesan cheese and basil. Leftovers can be stored in the refrigerator for up to 1 week.
