Last week was the unofficial start of summer: pool/lake days, loads of watermelon in the fridge, and BBQs just about every weekend. As those burgers and dogs are on the grill, their trusty sidekick is nearby– pasta salad. My favorite kinds are ones that are light, bright and fresh flavors on those hot summer days.

This basil parsley pesto is my new favorite. I pulled it together a few weeks ago after cleaning out the fridge and it’s now a staple in the house. I instantly starting thinking of different ways to add this to weekly dinners– try it on grilled chicken, add it on pizza, smear it on crackers, or pasta! The possibilities are endless!

With summer here, this pasta salad takes advantage of the abundance of fresh basil and cherry tomatoes. To it, I add a some chopped walnuts or pine nuts for that added crunch. I’m a texture person– all the texture.

We devoured this in just a few days– one night I added chopped grilled chicken. It totally gets better as it sits because the flavors have time to mingle and seep into the pasta. It’s that go-to recipe that you can make 1-2 days before that BBQ and friends/family will be asking for the recipe!

Basil Parsley Pesto Mozzarella Pasta Salad

Ingredients

Basil Parsley Pesto

  • 2 1/2 cups fresh basil, plus more for garnish
  • 1 cup fresh parsley
  • 1/2 cup roughly chopped walnuts
  • 1/2 cup extra-virgin olive oil
  • 1/3 cup freshly grated parmesan cheese
  • 3 garlic cloves, minced
  • zest from 1 lemon
  • juice from 1 lemon (2-3 TBSP)
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Pasta Salad

  • 1 pound dry pasta (elbow, bow tie or rotini work best)
  • 2 cups halved cherry tomatoes
  • handful fresh basil (about 1/3 cup)
  • 8 ounces fresh mozzarella, (cubed or mozzarella balls)
  • 1/4 cup pine nuts or chopped walnuts

Instructions

  1. Cook pasta according to package directions - remember to salt the water! Drain and cool for 5 minutes.
  2. While the pasta cooks or cools, make the pesto. Combine the basil, parsley and walnuts in a food processor. Pulse until finely chopped. Scrape down the sides, then add parmesan, garlic, lemon juice, lemon zest, olive oil, salt and pepper. Run the food processor until everything is blended together. Set aside.
  3. Stir the remaining pasta salad ingredients in with the pasta - fresh basil, mozzarella, cherry tomatoes, pine nuts or chopped walnuts.
  4. Cover and store in the refrigerator for up to 1 week. This recipe tastes even better on day 2 or 3, so it's the perfect make ahead recipe!

    This looks delicious! I’m a big fan of tomatoes, and all the rest just makes it more divine. Yummmm.
