Most nights I already have dinner planned, but I just wasn’t feeling it. I went looking in my overstocked pantry and found a mismash of items that I knew would go perfectly together. I grabbed some black beans, salsa and spices, and then headed over to the fridge and spotted some chicken and I knew I had frozen corn.
This is a set and forget crockpot recipe. You literally throw all the ingredients into the crockpot and cook on low. That’s why it’s so perfect for a week night dinner. Less time in the kitchen, more time with family.
