Healthy Chocolate Almond Truffles

These are healthy truffles are the perfect on-the-go snack — gluten-free, no refined sugar, and 100% delicious.

Ingredients
  

  • 1 cup raw whole almonds
  • 1 cup pitted Medjool dates (about 10-12), roughly chopped
  • ¼ cup unsweetened cocoa powder
  • 2 Tablespoons chia seeds
  • 3 Tablespoons almond butter (or any preferred nut butter)
  • 1 Tablespoon coconut oil, melted
  • Optional: 8 ounces semi-sweet or bittersweet chocolate

Instructions
 

  • Line a large baking sheet with parchment paper or a silicone baking mat. Set aside.
  • Place the almonds, dates1, cocoa powder, chia seeds, almond butter, and coconut oil in a food processor or blender. Pulse together until a moist dough forms. This takes about a minute or two. If the dough is too crumbly, add an additional Tablespoon of coconut oil.
  • Once the dough is formed, scoop out 1 Tablespoon of dough, roll into a ball and place onto the prepared baking sheet. Repeat with the remaining dough. Place in the refrigerator as you melt the chocolate in the below step. (Placing in the refrigerator during this step is not required, however, I think it helps when they are more firm for dipping in chocolate.)
  • Melt the chocolate2: place the chocolate in a medium microwave-safe bowl. Melt in 30-second increments, stirring after each until completely melted and smooth. Let the chocolate sit for a few minutes to cool slightly before dipping. 
  • Dip each ball completely into the chocolate using a fork or dipping tool (see above.) When lifting it out of the chocolate, gently tap the tool gently on the side of the bowl to allow excess chocolate to drop off. Place each back onto the baking sheet and refrigerator until the chocolate is set, about 25-30 minutes.

Notes

Make ahead tip: The truffles can be made in advance and stored in the freezer for up to 3 months. Thaw over night in the refrigerator.
1If the dates are not plump add them to a bowl with warm water for a few minutes. Drain and roughly chop.
2To keep this dairy-free, I use Enjoy Life chocolate. It's a favorite in this house and no one can tell that it's dairy-free! I find that they are the cheapest on Amazon unless there is a sale at your local store.
Dipping the truffles in chocolate is completely optional. With chocolate: 110 calories. Without chocolate: 65 calories.
