  • 1 cup honey
  • 1/3 cup pure maple syrup
  • 2 cups + 2 tablespoons creamy peanut butter, divided
  • 2 teaspoons vanilla extract
  • 3 and 1/2 cups cornflakes
  • 3 cups crispy rice cereal
  • 1/4 teaspoon salt
  • 2 and 1/4 cups semi-sweet chocolate chips

Instructions

  1. Line a 9x13 inch baking pan with parchment paper— lightly spray with non-stick spray or coconut oil. Set aside. In a large bowl, combine the crispy rice cereal, cornflakes, and salt. Set aside.
  2. Combine the honey, maple syrup, vanilla extract, 2 cups peanut butter in a medium saucepan over medium heat. Stirring occasionally until it comes to a gentle simmer. Remove from the heat.
  3. Pour the mixture over the crispy rice cereal and cornflakes and stir until it's all completely coated. Transfer the mixture to the prepared baking pan. Using a rubber spatula, gently spread mixture to fit the pan. Gently press the mixture down— do not pack it down.
  4. Combine the remaining peanut butter and chocolate into a microwave-safe bowl. At 30 second increments, head the mixture, stirring in between each until it's melted together. Mixture will be thick. This will take about 1 and 1/2 minutes total roughly, depending on your microwave. Spread evenly over the bars.
  5. Cover and refrigerate for 2 hours or up to 2 days. Lift the bars as a whole out of the pan using the parchment paper. Cut into squares.
  6. Cover and store leftover squares at room temperature for up to 3 days or in the refrigerator for up to 1 week.

Notes

  1. Make Ahead Instructions: These bars freeze wonderfully! Simply wrap individual squares and place into a large zip-topped bag for up to 3 months.
  2. Nut Butter: You can use any kind of nut butter for this recipe but make sure it's creamy!
  3. Chocolate: You can use any chocolate that you prefer.
