This everything biscuit breakfast casserole combines eggs, peppers, onions, and cheese with buttery biscuits in just one dish! You can use your favorite add-ins too! The best part is that you can prepare it ahead of time for busy mornings!

Ingredients

Units
  • 3 day-old biscuits, cut into bite-size pieces (about 4 cups)
  • 1 bell pepper, chopped
  • 1/3 cup onion, diced (about 1/2 small onion)
  • 9 large eggs
  • 1 cup milk
  • 1 cup shredded cheese
  • 2 Tablespoons everything bagel seasoning
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt
  • optional garnish: scallions

Instructions

  1. Preheat the oven to 375°F. Generously grease a 9x9 baking pan.
  2. Place half the biscuit pieces into the bottom of the pan. Layer on the peppers and onions. Then, whisk the eggs, milk, cheese, 1 Tablespoon of everything bagel seasoning, salt and pepper together in a large bowl. Pour evenly over the biscuits and peppers/onions.
  3. Top with the rest of the biscuit pieces and gently press down into the egg mixture. You want some of the biscuits soaking up the eggs. Top with the remaining 1 Tablespoon of everything bagel seasoning.
  4. Bake for 65-70 minutes or until the center is set and the edges are golden brown. Remove from the oven and allow the casserole to cool for 10 minutes before slicing and serving.
  5. Leftover casserole stays fresh in the refrigerator for up to 1 week.

Notes

  1. Make Ahead & Freezing Instructions: Assemble the casserole through step 3, then cover tightly and store in the refrigerator overnight. Remove from the refrigerator while the oven pre-heats, then continue with step 4. You may need to bake it an extra 1-2 minutes. You can also freeze a cooked casserole for up to 3 months. Thaw overnight in the refrigerator, then re-heat to your liking.
  2. Biscuits: You can use homemade biscuits, but store-bought is the easiest. Cut 4 biscuits into bite-size pieces, then let them sit overnight so they become a little stale. This will give the biscuits more texture and won't become too soggy in the egg mixture.
  3. Cheese: What cheese do you like the most? Use that! I love a good white or yellow cheddar cheese for this.
  4. Everything Bagel Seasoning: You can find everything bagel seasoning from most stores now. This seasoning adds tons of flavor. We use it often in this house so I buy it from Amazon (I find it's the best price for the size.)
  5. Milk: The milk helps thin out the eggs. For the best taste, I recommend using whole milk, though any type of milk works. I use oat milk or almond milk when I make this for lunches.
  6. Meat: You can add in your favorite type of meat. I've added sausage and it's delicious! Make whatever meat you add, it's pre-cooked. Layer in the meat in the same step that you add the peppers and onions.
