Ingredients
  

  • 1 Tablespoon olive oil
  • 1 poound small potatoes (fingerling, yukon gold), cut into small like-size pieces
  • 1 and ½ teaspoon fresh thyme, chopped
  • 2 teaspoons fresh rosemary, chopped
  • 1 and ½ pounds sirloin steak, cut into 1-inch cubes
  • 1 teaspoon salt
  • ¾ teaspoon freshly ground black pepper
  • 3 garlic cloves, minced
  • 1 Tablespoon unsalted butter

Instructions
 

  • In a large pan, like a 10-inch cast iron skillet, over medium-high heat, add the olive oil, potatoes, ½ teaspoon of salt, thyme, and rosemary. Cook for 10 minutes, stirring halfway, until the potatoes are fork tender. Remove from the skillet and set aside on a plate.
  • Increase the heat to high, add the steak bites, remaining salt, and pepper. Let the steak pieces sear for a minute then stir together. Once seared, add the butter.
  • Add the potatoes back in with the garlic, toss together, and cook for 3— the steak will be medium. Garnish with fresh herbs, if desired. Leftovers stay fresh in the refrigerator for up to 4 days.

Notes

  1. Steak: You can use any type of steak you prefer. This recipe uses sirloin steak for tenderness but also cost (compared to other tender cuts of meat.)
  2. Potatoes: The trick to making this dinner quick is keeping the potatoes smaller in size— this will allow them to not only cook quickly but also evenly.
