Making quinoa isn't hard. Here are step-by-step instructions for how to cook quinoa – it’s so simple and very little work involved!

  • 2 cups rinsed un-cooked quinoa
  • 3 and 1/2 cups low-sodium chicken stock
  • 1/2 teaspoon salt

Instructions

  1. Over high heat, bring the chicken stock to a boil in a 3 quart or more pot. Add the quinoa and stir. Allow the quinoa to boil for 5 minutes. Then, turn the heat off and cover the pot with a well-fitted lid.
  2. Let the quinoa sit covered for 30 minutes until the chicken stock is fully absorbed— do not remove the lid.
  3. Once cooked, remove the lid and fluff with a fork.

Notes

  1. Make Ahead Instructions: Quinoa can be made in advance and refrigerated for up to 1 week. It can also be frozen for up to 3 months— make sure it's completely cooled before freezing. Thaw overnight in the refrigerator.
  2. Quinoa: If the quinoa you buy doesn't say "rinsed" make sure you rinse it.
  3. Chicken Stock: I find that stock (chicken, beef or vegetable) gives the best flavor, but you can use water as a substitute.
