Place the chopped apples in the slow cooker. Stir in the cinnamon, vanilla extract, maple syrup, and water. Cover with the lid and cook on high for 2-3 hours. (You can also cook on low for 6-7 hours if that works better for your day.)
Scoop the apples into a blender or food processor. Blend or process until smooth, or desired consistency.
Serve warm or cold. Allow the applesauce to cool completely before storing. Leftovers stay fresh in the refrigerator for up to 1 week.

Make Ahead Instructions: This applesauce can be made up to 1 week in advance, covered tightly and stored in the refrigerator.
Freezing Instructions: Allow the applesauce to cool completely before storing in a freezer-safe container and freeze for up to 3 months. Thaw overnight in the refrigerator.
Apples: It's best to use softer apples like Red Delicious, Gala, and McIntosh. However, you can use any combination that you prefer.
Maple Syrup: Add an additional 1 Tablespoon if you prefer it slightly sweeter. You can also substitute with honey.
No Blender/Processor? The apples are soft enough that you can use a wire whisk or potato masher. I recommend that if you're not using a blender, food processor, or immersion to peel the apples prior to cooking.
