- Honey: There's honey in this recipe to help not only bind the ingredients together, but also sweeten the bars.
- Maple Syrup: Adding some maple syrup adds flavor and a touch of sweetness.
- Peanut Butter: Using natural-style peanut butter would be totally fine, but for best texture, I recommend using a creamy peanut butter like Jif or Skippy. Over here, we're a Jif family.
- Vanilla Extract: A splash of vanilla extract takes these over the top. Just like my rice krispie treats, I can't make them without it.
- Cornflakes: This cereal is the base of the bars.
- Rice Cereal: This cereal is the base of the bars.
- Salt: To balance out the sweetness, just a little bit of salt does the trick.
- Chocolate Chips: You need 2 and ¼ cups of chocolate chips for the topping.
Overview: How To Make Chocolate Peanut Butter Crunch Bars
- Line a 9x13 inch baking pan with parchment paper— lightly spray with non-stick spray or coconut oil. Set aside. In a large bowl, combine the crispy rice cereal, cornflakes, and salt. Set aside.
- Combine the honey, maple syrup, vanilla extract, 2 cups peanut butter in a medium saucepan over medium heat. Stirring occasionally until it comes to a gentle simmer. Remove from the heat.
- Pour the mixture over the crispy rice cereal and cornflakes and stir until it's all completely coated. Transfer the mixture to the prepared baking pan. Using a rubber spatula, gently spread mixture to fit the pan. Gently press the mixture down— do not pack it down.
- Combine the remaining peanut butter and chocolate into a microwave-safe bowl. At 30 second increments, head the mixture, stirring in between each until it's melted together. Mixture will be thick. This will take about 1 and ½ minutes total roughly, depending on your microwave. Spread evenly over the bars.
- Cover and refrigerate for 2 hours or up to 2 days. Lift the bars as a whole out of the pan using the parchment paper. Cut into squares.
- Cover and store leftover squares at room temperature for up to 3 days or in the refrigerator for up to 1 week.
