Everything Biscuit Breakfast Casserole Ingredients
- Biscuits: You can use homemade biscuits, but store-bought is the easiest. Cut 4 biscuits into bite-size pieces, then let them sit overnight so they become a little stale. This will give the biscuits more texture and won't become too soggy in the egg mixture.
- Everything Bagel Seasoning: You can find everything bagel seasoning from most stores now. This seasoning adds tons of flavor. We use it often in this house so I buy it from Amazon (I find it's the best price for the size.)
- Eggs: You need 9 eggs for this recipe. The eggs are the base of the casserole and help keep everything together.
- Bell Peppers & Onion: Adding a fresh element gives this casserole great texture. There's no need to pre-cook either of these.
- Milk: The milk helps thin out the eggs. For the best taste, I recommend using whole milk, though any type of milk works.
- Cheese: What cheese do you like the most? Use that! I love a good white or yellow cheddar cheese for this.
- Salt & Pepper: You don't need much since the everything bagel seasoning does most of the work.
Let's Make Everything Biscuit Breakfast Casserole
There's 4 steps to this casserole. I can't emphasize this enough, make sure you generously grease the baking dish otherwise good luck getting this out of the baking dish.
- Biscuits on the Bottom: Take half of the biscuits and place them on the bottom of the baking dish.
- Add the Veggies: Place the peppers and onions on top.
- Egg Mixture & Cheese: Pour in the egg and cheese mixture, the biscuits should be covered.
- Biscuits on the Top: Add the remaining biscuits to the top and gently press down. You want them soaking up some of the egg mixture but also want some popping out.
This is a breakfast casserole where you can mix and match your favorite add-ins. You can use red and green bell peppers to be a bit festive or you can add in a cooked meat like bacon or sausage. It's also that type of casserole that has texture, it's not a soggy mess.
Make Ahead Option
If you need a head start on tomorrow's breakfast, you can prepare and assemble the entire breakfast casserole the night before. Cover and place in the refrigerator overnight, then the next morning while the oven pre-heats, take it out of the refrigerator. Bake for a few extra minutes. You can also freeze a baked egg casserole. Thaw overnight in the refrigerator. See my notes below.
This is truly the breakfast that keeps on giving. There were enough leftovers to have for breakfast and lunch for a few days! I've made this 4x in the last month and plan to make it again for Christmas!
Everything Biscuit Breakfast Casserole
Description
Ingredients
- 3 day-old biscuits, cut into bite-size pieces (about 4 cups)
- 1 bell pepper, chopped
- ⅓ cup onion, diced (about ½ small onion)
- 9 large eggs
- 1 cup milk
- 1 cup shredded cheese
- 2 Tablespoons everything bagel seasoning
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon salt
- optional garnish: scallions
Instructions
- Preheat the oven to 375°F. Generously grease a 9x9 baking pan.
- Place half the biscuit pieces into the bottom of the pan. Layer on the peppers and onions. Then, whisk the eggs, milk, cheese, 1 Tablespoon of everything bagel seasoning, salt and pepper together in a large bowl. Pour evenly over the biscuits and peppers/onions.
- Top with the rest of the biscuit pieces and gently press down into the egg mixture. You want some of the biscuits soaking up the eggs. Top with the remaining 1 Tablespoon of everything bagel seasoning.
- Bake for 65-70 minutes or until the center is set and the edges are golden brown. Remove from the oven and allow the casserole to cool for 10 minutes before slicing and serving.
- Leftover casserole stays fresh in the refrigerator for up to 1 week.
Notes
- Make Ahead & Freezing Instructions: Assemble the casserole through step 3, then cover tightly and store in the refrigerator overnight. Remove from the refrigerator while the oven pre-heats, then continue with step 4. You may need to bake it an extra 1-2 minutes. You can also freeze a cooked casserole for up to 3 months. Thaw overnight in the refrigerator, then re-heat to your liking.
