I have a confession to make: I haven't been the biggest fan of the air fryer. There's thousands of recipes out there but its used minimally in this house. That is, until now. After making this chicken recipe a handful of times I can say with 100% certainty that it produces the absolute best chicken, every single time.

- Chicken Breast: Any cut of chicken will work– thighs, breasts, drums, wings, but keep in mind that the cooking time may vary. The spice mixture works for 1.5 pounds of chicken.
- Cornstarch: Cornstarch plays a key role in this air fryer chicken recipe. You don't need much, just 2 teaspoons but without it the chicken won't get as crispy and juicy. More that on that below.
- Spices: In addition to the usual salt and pepper, we're using pantry staple spices like garlic powder, onion powder, paprika and oregano to give the best flavor.
- Olive Oil: Olive oil is typically what I have on hand, but any type of oil will work such as avocado oil or coconut oil.

This air fryer chicken recipe is guaranteed to produce the juiciest, most flavorful chicken every single time. Let's walk through the 3 steps.
- Before you begin, pat the chicken dry with paper towels– just like the baked chicken wings, you want the chicken as dry as possible.
- Stir the spices and cornstarch together. Then, add the chicken and olive oil and toss together. You want the chicken completely coasted.
- Place the chicken in the air fryer in a single layer, giving room around each. Cook for 12 minutes at 400°F.
Success Tips
- Make sure the chicken is as dry as possible. The more dry the exterior is, the better results.
- Try using your hands when combining the chicken, olive oil and spices– it makes it much easier to work the spices into the chicken.
- Don't overcook the chicken– just until it reaches an internal temperature of 165°F. The cooking times may slightly vary depending on the thickness so keep an eye on it.
- Allow the chicken to rest for 5 minutes before slicing to let the juices redistribute throughout. If you cut the chicken immediately the juices will pour out resulting in dry chicken.

Ingredients
- 1 ½ pounds boneless skinless chicken breast, sliced thin
- 3 teaspoons olive oil
- 1 ½ teaspoons paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon dried oregano
- ¾ teaspoon salt
- ½ teaspoon freshly ground black pepper
- 2 teaspoons cornstarch
Instructions
- Pat the chicken dry with paper towels– you want them as dry as possible on the outside.
- Stir the spices and cornstarch together in a medium mixing bowl. Then, add the chicken and olive oil and toss together until completely coated. I find your hands work best, though you can use tongs too!)
- Place the chicken in the air fryer in an even layer, giving some room around each piece for air to circulate. Cook for 12 minutes at 400°F until the chicken reaches an internal temperature of 165°F.
- Allow the chicken to rest for 5 minutes before slicing.
Notes
- Make Ahead & Freezing Instructions: This is a perfect make-ahead recipe. Store the cooked chicken in an airtight container in the refrigerator for up to 5 days. You can also freeze cooked or uncooked chicken for up to 3 months. Thaw overnight in the refrigerator– if uncooked, continue with step 3.
- Can I use a different cut of chicken? You can, any cut will work– thighs, breasts, drums, wings, but keep in mind that the cooking time may vary. You want the cuts to be roughly the same size for even cooking. The spice mixture works for 1.5 pounds of chicken.
