I have to admit, I've been in a dinner rut lately. When I'm in a rush to get dinner on the table especially during those busy nights, I usually turn to this lasagna soup or alphabet vegetable soup. Both are equally delicious but it's time for a change.

Ingredients For Garlic Herb Butter Steak Bites
- Steak: I prefer to use sirloin steaks for this, but you can use whatever you have on hand or prefer.
- Potatoes: Any type of small potatoes work best, like fingerling potatoes
- Olive Oil: Just a little bit goes a long way in this recipe— just need a little bit to start off with.
- Salt & Pepper: Adding these as basics to bring out the flavor of the meat.
- Garlic, Thyme & Rosemary: You can use fresh or dried, but I find that using fresh takes these steak bites to the next level.
- Butter: Just 1 Tablespoon of butter to finish these off— it adds a buttery flavor to the steak bites.
Let's Make Dinner!
This one pan meal is quick— done in 35 minutes and so easy to pull together. Let me show you:
- In a large pan, like a 10-inch cast iron skillet, over medium-high heat, add the olive oil, potatoes, ½ teaspoon of salt, thyme, and rosemary. Cook for 10 minutes, stirring halfway, until the potatoes are fork tender. Remove from the skillet and set aside on a plate.
- Increase the heat to high, add the steak bites, remaining salt, and pepper. Let the steak pieces sear for a minute then stir together. Once seared, add the butter.
- Add the potatoes back in with the garlic, toss together, and cook for 3— the steak will be medium. Garnish with fresh herbs, if desired. Leftovers stay fresh in the refrigerator for up to 4 days.

That's up to you! The recipe calls for sirloin steak not only for tenderness but also cost. But you can use tenderloin, sirloin, strip or filet— whatever you prefer or have on hand.
These steak bites can easily be a full dinner themselves but some nights we've paired it with things like— simple salad, kale salad (leave out the sweet potatoes) no knead bread, oven roasted asparagus, brown butter garlic mushrooms, cauliflower and broccoli au gratin or cornbread.
Helpful Tips
While this recipe is easy, there are a few things to keep in mind.
- Make sure the pan is HOT! For this recipe, I like to use a cast iron skillet because it can get VERY hot compared to other pans. You want the steak to sear which can only happen on very high heat.
- Don't crowed the skillet. It's OK if the potatoes are close together, but when adding the steak to sear, you don't want too many in there at once otherwise they will steam. If need be, cook the steak in batches.
