    I'm writing this immediately after I photographed this recipe and say this with 100% honesty that everyone will RUN to these slow cooker buffalo chicken sliders. These were a HUGE hit, and the fact that they are incredibly easy to make is music to anyone's ears! It's true when they say "slow cookers are magical!"

    • Flavor: If you enjoy buffalo, you'll LOVE these buffalo chicken sliders. These aren't too spicy, though if you prefer a higher spice level, go ahead and grab spicier hot sauce.
    • Texture: Thanks to the cream cheese these buffalo chicken sliders is incredibly creamy.
    • Ease: Toss the ingredients together in a slow cooker and let it do 99% of the work for you!

    10 Ingredients To Use & Why

    • Chicken: You need a total of 1 pound chicken— either chicken breasts or chicken thighs. For this recipe, I prefer to use chicken breast but use what you have/prefer!
    • Buffalo Sauce: When it comes to buffalo sauce, all I use is Frank's— I grab the original. I may or may not have 5 jars in my pantry.
    • Spices: There's just a few key spices to add a boost of flavor to the chicken— garlic powder, onion powder, salt, and pepper.
    • Cream Cheese: You want to use block-style cream cheese to kick up the creaminess.
    • Cheddar Cheese: The more cheese, the better.
    • Butter: This ingredient is only required if you choose to bake the the sliders prior to feeding. When I feed a crowd, I skip this step and just toast off the buns (if you prefer) and just set the rolls next to the slow cooker. If you do this step, make sure you use unsalted butter.
    • Rolls: Really you can use any size or type of rolls you prefer but if feeding a crowd, grab smaller rolls like Hawaiian rolls.

    How To Make These Slow Cooker Buffalo Chicken Sliders

    1. Place the chicken into a 4 quart or larger slow cooker— here's the one that I own and love. Sprinkle over the chicken the salt, pepper, garlic powder and onion powder. Add the cream cheese and water. Cook on high for 3-4 hours or low for 6-7 hours.
    2. Remove the chicken from the slow cooker and, using 2 forks, shred into smaller pieces.
    3. Place the shredded chicken back into the slow cooker, add the cheese and stir to combine. Cook for 15-30 minutes more.
    4. Split the rolls in half and place them into the bottom of a 9x13 baking dish. Split the rolls in half and place them into the bottom of the dish. Spread the chicken mixture on the bottom half of the rolls, spread the blue cheese dressing, then place the rolls on top. Slice and serve!
    5. Optional: Preheat the oven to 350°F degrees. Spray the bottom of a 9x13 baking dish with non-stick spray. Split the rolls in half and place them into the bottom of the dish. Spread the chicken mixture on the bottom half of the rolls, spread the blue cheese dressing, then place the rolls on top. Brush the tops of the rolls with the melted butter. Cover with aluminum foil and bake for 10 minutes. Remove the foil and bake for another 5 minutes (or until the tops of the rolls are golden brown.) Remove from the oven, slice and serve!

    I want you to be successful with any recipe that you try— here's a few tips for success:

    • You can use fresh or frozen chicken. If using frozen, add 1 additional hour to the cooking time.
    • This is truly a make ahead recipe— whether it's for the day of or prepping for the week. You can refrigerate the chicken for up to 5 days.
    • Can't have dairy? This recipe can be easily made without dairy by swapping a few ingredients— vegan butter, cheese and cream cheese! I've done it and it's just a delicious!

    Ingredients

    • 1 pound boneless skinless chicken breasts
    • 1/2 cup buffalo sauce
    • 1/2 teaspoon salt

    • 1 package small dinner rolls, like Hawaiian rolls
    • 2 Tablespoons unsalted butter, melted
    • 1/3 cup blue cheese dressing

    Notes

    1. Make Ahead Instructions: To make this dish even easier, you can use shredded rotisserie chicken and skip the slow cooker completely. If doing this way, combine all the ingredients together in a bowl and then follow step 5.
    2. Chicken: You can use any chicken breasts or thighs. You can even use rotisserie chicken too!
    3. Rolls: Any small dinner rolls will work for this as long as they are similar in size to Hawaiian rolls.
